Jalapeño Stuffed with Cream Cheese, James’ Style
This was a favorite appetizer of Grandpa, my father, and one of our favorites too. He would stuff the jalapeño halves with cream cheese and then wrap it with bacon and baked them in the oven. I know James in particularly loves this appetizer. As we were in the kitchen together cooking he actually put a twist to it, and I must admit it was delicious. It is an appetizer you must try. You never know if jalapeños are hot or not until you bring them home. Make sure to warn your guest.
6 jalapeños cut in half and seeded
4 ounce cream cheese
1 garlic clove minced
1 tablespoon green onion thinly sliced (green part only)
2 slices of bacon chopped and cooked
1 teaspoon of lime juice
4 slices of bacon cut in 3 equal pieces (a total of 12 pieces)
1 avocado diced in small pieces
Preheat oven 400 degrees F.
In a bowl add cream cheese, garlic, green onion, cooked bacon, and lime juice and mix all ingredients together.
Stuff cream cheese mixture in each jalapeño and top it with a piece of bacon.
Bake until bacon is crisp about 20 to 25 minutes. Plate and top with avocado pieces.
Makes 12 pieces and serves 4-6
