Homemade Breakfast Sausage

You’ll be amazed how homemade breakfast sausage is easy to prepare and how tasty it is also. Ground pork can be an essential meat to have on hand for whenever you need Mexican chorizo, Italian sausage, and breakfast sausage as an ingredient, but now you can pull out the ground pork and make them homemade. Here in Ecuador I have had to research recipes like this so I can have these sausages on hand.  When I return to the states I’m not sure if I will ever buy these sausages, because they are so easy to make and in my opinion are just as good as the ones I can buy at the store.  Perhaps because I really don’t use these ingredients very much that I would rather make them myself.

1 pound ground pork

1 tablespoon bacon fat

3/4 teaspoon kosher salt

3/4 teaspoons freshly ground black pepper

1/2 teaspoon ground sage leaves

1/2 teaspoon dried thyme leaves

1/8 teaspoon finely chopped dried rosemary leaves

1/2 tablespoon light brown sugar

1/4 teaspoon fresh grated nutmeg

1/4 teaspoon cayenne pepper

1/4 teaspoon red pepper flakes

Mix together the spice ingredients in a mixing bowl and then add pork and bacon fat mixing together until it is well incorporated.  Cover and chill for an hour.  Refrigerate and use within 1 week or freeze for up to 3 months.  For immediate use, sauté patties over a medium-low heat in a nonstick pan.  Sauté until brown and cooked thoroughly, around 15 minutes or so.
