In a skillet cook bacon till crispy (super crispy, my preference), remove from pan and drain on paper towel.

Leaving 1 tablespoon of bacon fat for sautéing onion, poblano pepper, and tomatoes, then return bacon to mixture.

After beans have boiled for 1 hour, add mixture to beans and salt to taste, cover and cook for another hour till beans are tender.

Add cilantro just before serving.
