Chorizo and egg burritos or chorizo with potato tacos who doesn’t like them. You might be thinking “Ok, I know Clara and I don’t remember seeing her eat chorizo”. I will say that you are right. I do like it but I ate it now and then when you were not looking. I might have eaten it twice a year. But when you don’t have something readily available you come to miss it. Basically it’s a spice mixture and vinegar that makes this ground pork into chorizo. And this is a make ahead at least a day before you use it. Some recipes were a little to elaborated for me and maybe they are better seeing that you are using some fresh ingredients. But this recipe is simple and definitely a crowd pleaser.

1 pound ground pork
2 tablespoons chili powder or ancho powder
1 tablespoon sweet paprika
1 teaspoon smoked paprika
1 teaspoon ground cumin
1 teaspoon salt
1 teaspoon garlic powder
1/2 teaspoon ground coriander
1/2 teaspoon dried oregano, crushed
1/4 teaspoon ground chile flakes
1/8 teaspoon ground cloves
1/8 teaspoon ground black pepper
1/4 cup apple cider vinegar

Mix together all the spice ingredients in a mixing bowl and stir until well combined, then add pork and mix together well. Add apple cider vinegar and knead until all is well incorporated.
Refrigerate overnight or freeze until ready to use.
