Artichoke Cheese Dip

Jenna and I and sometimes Kelly, James, or Michael or all of them would eat there whenever we had Doctor appointments at the Med Center. I would order extra and take it to the lab (mi cocina) to try to recreate it. After many trials I think I finally got it, I don’t think it compares to the one at the restaurant but this recipe is certainly a family favorite.

1 15-ounce can artichoke hearts, drained and chopped
12 ounces mozzarella cheese grated
1 cup mayonnaise
1 cup Parmesan cheese grated
1/2 teaspoon minced garlic
1 teaspoon chives finely chopped
1/2 teaspoon parsley finely chopped
1 teaspoon lemon juice
Mix all the ingredients in a 5 by 9-inch baking dish. Cook at 325 degrees for 45 minutes. Serve warm with crackers or fresh bread.
Serves: 10 servings as a dip
